The renowned farm-to-fork eatery, Crofter’s Kitchen, located in Scourie on the NC500, has been named a Scottish Edge Regional Edge Winner, receiving a significant funding boost to support its expansion plans.
Announced on Thursday, 6th March, the award will help bring Crofter’s Kitchen’s innovative shipping container restaurant to life, pending planning approval this summer.
Designed as a sustainable and practical dining space, the new venue will provide much-needed indoor seating, ensuring both visitors and locals can enjoy high-quality food despite Scotland’s unpredictable weather.
“With a minimum of 70,000 potential diners passing through Scourie annually, the demand for high-quality, accessible dining options is clear,” said Grant, co-founder of Crofter’s Kitchen.
“Winning this funding allows us to take a significant step forward in creating a unique, year-round dining experience while supporting our local economy.”
This exciting new addition will transform the dining experience in the Scottish Highlands, offering a modern, weatherproof space where guests can savour fresh, locally sourced cuisine without worrying about the elements.
With seating capacity set to increase by 50%, the new restaurant will serve more travellers seeking a welcoming and memorable stop along the NC500.
Beyond enhancing the local dining scene, the project will create new employment opportunities and strengthen ties within the community by prioritising ingredients from local farmers and suppliers.

“This funding will allow us to accelerate our plans, providing an unforgettable culinary experience in the Highlands and ensuring that guests travelling the NC500 have a reliable, high-quality indoor dining option.”
If approved this summer, Crofter’s Kitchen expects to have its shipping container restaurant fully operational within eight weeks of installation.
